Savage Thief in the Night 2022 is produced from a blend of 86% Grenache and 14% Cinsault, from dry-farmed bush vines grown on sandstone soils. Grapes are meticulously sorted in the winery as whole bunches, roughly 10% is excluded from year to year. Spontaneous fermentation takes place in a combination of conical foudre and open top fermenters with 20% of the fruit being retained as whole bunches. After 2 weeks on skins the fermented grapes are basket pressed followed by 10 months in foudre and older 500-litre. Residual sugar: 2.8g/l. Bottled at 13.5%. (Bottle size 750ml)

Nose: The wine shows a delightful autumnal aromatic profile of forest undergrowth, savoury fraise de bois, tilled earth, grilled Provençal herbs and subtle shades of summer garrigue.

Palate: Plenty of textural detail, fine silky caressing tannins, and harmonious fresh acids. The red and blackberry fruits are earthy but impressively pure and precise.

Finish: Firm chalky tannins with lingering notes of bramble berries, pomegranates, and sappy spice.
